Production Process: After harvesting, the artisanal process of making Convite mezcal starts with a conical pit-where the magic happens-and intensifies the flavor of the agave right before being crushed in a stone wheel drawn by a mule called tahona. The mashed agave is then left to ferment naturally, with no chemical additives, and is distilled twice in copper pot stills.
