The 20-year-old Dictador Icon Reserve is also distilled from the fermentation of native “sugar cane honey” – the honey-like sugar cane syrup which, unlike molasses, is an essence of fresh sugar cane juice – partly in copper alembics and partly in steel tanks. The process used is the column distillation method. This produces a medium-bodied rum that is pleasantly aromatic. Maturation takes place in American oak barrels. This is the only way to ensure that all the secrets are retained in the liquid aroma. Incidentally, Dictador rum is not sweetened like many other “main stream rums” today. Nevertheless, it has a subtle natural sweetness, which makes it particularly harmonious.
