While pechuga-style spirits are a recent innovation in Logoche, the infusion of agave distillate with locally sourced fruit is a time-honored practice in Miahuatln and its neighboring communities, typically reserved for special occasions and crafted in minuscule quantities.
This exceptional batch comes from the creative mind of Simitrio Aquino, a distiller known for his small-batch artistry. During a period focused on Espadn, Simitrio set aside 120 liters of single-distilled low wines from mature (capn) Espadn in the esteemed Etla region. To this, he artfully added approximately six kilos of fresh fruit a medley of banana, guava, apple, pineapple, grape, mango, and nance sourced from the vibrant market nearby Miahuatln.
Distilled with meticulous care under low heat in July 2024, this unique combination yielded a mere 45 liters at a robust 48.6% ABV, achieving the coveted “cordn cerrado” (tight pearl).
